Creamy Green Peppercorn Sauce

Directions

  1. Heat a saucepan over low to medium heat and melt the butter. Add the shallots, garlic, and M’Lord Green Peppercorns, stirring gently. Cook for 4–6 minutes until the aromatics are soft and fragrant.
  2. Deglaze the pan with brandy, allowing it to simmer briefly so the alcohol evaporates.
  3. Pour in the chicken stock and bring the sauce to a steady boil. Reduce the heat and let it simmer until the liquid has noticeably thickened and reduced by about half.
  4. Stir in the cream and return to a gentle simmer. Cook for 5 minutes, stirring occasionally, until the sauce becomes smooth, lightly thickened, and pale tan in colour.
  5. Taste and adjust seasoning if needed. Keep warm and serve immediately.
