Thai Red Pepper Curry with Bamboo

Directions

1. Add red pepper and carrots to a pan over medium heat with oil, saute until softened

2. Add curry paste, fish sauce and stir to combine. Add milk, sugar and stir. Cover with a lid and simmer for 15-20 minutes

3. Add cubed tofu and simmer for another 10 minutes

4. Meanwhile, make rice by adding rice and water to a pot and bringing to a boil, then reduce to a simmer and cover with a lid for 15 minutes

5. Place rice in a bowl and top with curry and cilantro, enjoy
