Directions
1. Sauté capers in oil for a few minutes while stirring constantly to avoid burning. Set aside.
2. In a bowl, mix all ingredients thoroughly, except the meat.
3. Using a sharp knife, chop meat finely and add it to the bowl. Add capers and stir.
4. Place a cookie cutter on a plate. Place a tablespoon of onion confit in the bottom and fill with tartare.
5. Serve with lamb's lettuce and croutons.
