Lettuce tacos with sausage, sun-dried tomatoes & hearts of palm

Directions

  1. Rinse and drain canned thin-cut hearts of palm.
  2. Cook the sausages, crushing them and chopping them into pieces according to the package instructions.
  3. Mix the hearts of palm with the finely chopped parsley and olive oil. Set aside.
  4. Prepare mayonnaise by mixing lemon juice, julienned sun-dried tomatoes, garlic powder, salt and pepper.
  5. Assemble the lettuce tacos, starting with two lettuce leaves on each taco. Top with hearts of palm, mayonnaise, sausages, green onions and radishes.
