Shakshuka

Directions

  1. Add onion to a pan and saute until soft, then add tomatoes, red pepper and spices and stir to combine. Bring to a simmer for 15 minutes.
  2. After 15 minutes, use a hand blender to smooth the mixture.
  3. Add eggs to the top of the tomato mixture and cover with a lid. Low simmer for another 5-8 minutes, until eggs are soft cooked.
  4. Add toppings and enjoy with bread.
