Hearts of Palm Mozzarella Sticks

Directions

  1. Drain and pat dry the hearts of palm.

  2. Prepare 3 bowls: the first with flour, the second with beaten eggs, and the third with a mixture of panko and Italian breadcrumbs.

  3. Roll the hearts of palm in the flour, then dip them in the beaten eggs, and coat them with the panko mixture. Repeat the dipping in eggs and panko once more for a thicker, extra crispy coating.

  4. Fry in vegetable oil for 2–3 minutes on each side, or until the sticks are golden brown and crispy.

  5. Sprinkle with parmesan and fresh basil. 
  6. Serve hot with Rao’s pizza sauce and/or your favorite dip.
