Directions

  1. Preheat the oven to 180 ° C (350 ° F).
  2. On a baking sheet lined with parchment paper, place the prosciutto slices. Bake, 12 to 15 minutes, turning the prosciutto halfway through cooking, until crispy. Remove from the oven and let cool.
  3. Meanwhile, cook the pasta al dente in a pot of salted boiling water. Drain and cool under cold water. Drain again.
  4. In a large bowl, combine the oil with the zest, lemon juice, maple syrup and herbs. Salt and pepper.
  5. Add the onion, garlic, sundried tomatoes and artichokes to the salad bowl. Stir. Add the pasta and Parmesan. Stir. Garnish with prosciutto chips.
