Sheet Pan Roasted Tofu and Veggies with Creamy Mint Sauce

Directions

  1. In a large bowl, combine all the ingredients for the marinade.
  2. Tear the tofu into bite-sized chunks. Add tofu to marinade and set aside. (For more pronounced flavours, marinate in fridge 12 hours).
  3. Preheat oven 400 degrees.
  4. Chop the vegetables, add a drizzle of olive oil, garlic powder, salt and pepper and mix well. Spread on baking sheet.
  5. Add the marinated tofu to the baking sheet and bake 20 minutes, until the vegetables are roasted.
  6. Meanwhile, in the small bowl, combine the mint sauce and yogurt. Set aside and serve with your plate.
  7. To serve, add arugula, a drizzle of additional mint sauce to taste, the sauce and sprinkling of sumac, if desired.
  8. Serve with rice and/or pitas.
