Directions
- In a large bowl, combine all the ingredients for the marinade.
- Tear the tofu into bite-sized chunks. Add tofu to marinade and set aside. (For more pronounced flavours, marinate in fridge 12 hours).
- Preheat oven 400 degrees.
- Chop the vegetables, add a drizzle of olive oil, garlic powder, salt and pepper and mix well. Spread on baking sheet.
- Add the marinated tofu to the baking sheet and bake 20 minutes, until the vegetables are roasted.
- Meanwhile, in the small bowl, combine the mint sauce and yogurt. Set aside and serve with your plate.
- To serve, add arugula, a drizzle of additional mint sauce to taste, the sauce and sprinkling of sumac, if desired.
- Serve with rice and/or pitas.
