Mediterranean-style artichoke bottoms

Directions

1. Preheat oven to 205°C (400°F).

2. In a skillet, heat oil over medium heat. Cook onion, garlic and bell pepper for 2 to 3 minutes.

3. Add baby spinach and cook for 1 minute, stirring. Remove from heat.

4. Add olives, half the feta cheese and oregano. Season with salt and pepper and stir.

5. Divide the mixture among the artichoke bottoms and place them on a baking sheet lined with parchment paper. Bake for 12 to 15 minutes.

6. Just before serving, garnish artichoke bottoms with remaining feta cheese.
