Shredded hearts of palm burger

Directions

1. Drain and rinse palm hearts, then shred with a fork. Reserve in a bowl.

2. In a saucepan, melt the butter over medium heat. Cook the onion for 3 to 4 minutes.

3. Add applesauce, ketchup, tomato paste, apple cider vinegar, brown sugar and chili powder. Salt, pepper and stir. Bring to a boil.

4. Add the shredded palm hearts. Cover and simmer for 4 to 5 minutes over low heat.

5. In a bowl, combine the ingredients of the coleslaw.

6. Heat a large skillet over medium heat. Cook the hamburger buns for a few seconds.

7. Garnish with mayonnaise, hearts of palm in sauce and coleslaw.

*For a vegan version use a vegan mayonnaise
