The artichoke is part of the thistle plant family and is usually grown in Mediterranean areas. The fleshy base or artichoke bottom is tender and has a taste similar to that of the artichoke heart. Much like the heart, the bottom makes for beautiful and delicious appetizers, baked dishes, and can be used in salads or any other recipe calling for hearts.
