From the locavore movement to the lockdown sourdough craze to the TikTok pasta that broke the internet, there’s never a dull moment in culinary trends. What does the next year have in store for us? Read on to find out!

Plant-based cooking
For a few years now, the number of Canadians eating less meat has been steadily climbing, and we expect this trend to continue. In fact, many of the people reading this blog post likely identify as vegan, vegetarian or flexitarian. Recipe developers, from stay-at-home moms to professional chefs, have taken note of this trend and found innovative ways to adapt. Meatless cooking has come a long way from the lentil loaves and seitan roasts of yesteryear! You can now find satisfying dupes for nearly all your favourite meat- and fish-based dishes, even ceviche and carpaccio!


Experimenting with new ingredients
After so long being stuck at home, people are hungry for a little excitement! We predict that more home cooks will try out ingredients they don’t normally cook with, like cassava, an incredibly versatile tuber that’s equally at home in waffles and croquettes. We dare you to try cooking snails this year!


Simple meals
The last few years have been tough, and a lot of us are just plain worn out. That’s why this year’s culinary watchwords will be: simple and satisfying. Think soups, salads, stir-fries, grilled foods and casseroles featuring fresh, healthy ingredients. It can be nice to take the time to make a gourmet meal once in a while, but sometimes dinner is just one more thing on your to-do list. Might as well make it tasty!


Reconnecting
Public health restrictions are gradually being phased out this year, and that means we can look forward to reconnecting with friends and family. Family dinners and after-work happy hours will be making a comeback, as will shareable dishes like bite-size hors d’oeuvres served alongside cocktails and family-style mains.
