Directions
1. Cut the salmon into 0.5 cm (1/4 ") dice.
2. In a bowl, mix the salmon cubes with the capers, mayonnaise, salad dressings and shallots.
3. Place a 7.5 cm (3 in.) Diameter cookie cutter on a plate. Fill with tartar and squeeze with the back of a spoon to even the surface. Remove from the mold gently. Repeat to form the other portions.
4. Garnish the tartar with fried onions and a couple caperberries.
