Directions
- Bake orzo following package instructions.
- Preheat oven to 375 degrees.
- Finely chop grilled vegetables. Set aside.
- Grill portobello mushrooms over medium-high heat for 5 to 7 minutes with salt and pepper to taste. Set aside.
- In a large bowl, combine cooked orzo, grilled vegetables, lemon juice, fresh parsley and M'LORD Grilled Vegetables Marinade.
- Stuff the portobello mushrooms with the orzo mixture, then add goat's cheese or a favorite cheese. Place in the oven for approx. 7 minutes.
- Just before serving, garnish mushrooms with a drizzle of hot oil or balsamic reduction. Bon appétit!
