Hearts of Palm, Goat Cheese and Grilled Red Pepper Frittata

Directions

1. In a bowl, beat the eggs with the parsley and season with salt and pepper. Set aside.

2. In a non-stick pan cook the shallots and garlic in oil for one to two minutes.

3. Mix the potatoes, palm hearts, and grilled peppers together and gently pour into the egg mix.

4. Drop pieces of cheese on top of the mix, cover and finish cooking over medium heat for 10 to 12 minutes or until the egg mix is almost set.

5. Finish under the broiler to turn a light brown, about one to two minutes.

Note Frittata can be served lukewarm on a bed of bitter lettuce or cut into slices as garnish on a sandwich.
