Mushrooms filled with orzo & grilled vegetables

Directions

  1. Bake orzo following package instructions.
  2. Preheat oven to 375 degrees.
  3. Finely chop grilled vegetables. Set aside.
  4. Grill portobello mushrooms over medium-high heat for 5 to 7 minutes with salt and pepper to taste. Set aside.
  5. In a large bowl, combine cooked orzo, grilled vegetables, lemon juice, fresh parsley and M'LORD Grilled Vegetables Marinade.
  6. Stuff the portobello mushrooms with the orzo mixture, then add goat's cheese or a favorite cheese. Place in the oven for approx. 7 minutes.
  7. Just before serving, garnish mushrooms with a drizzle of hot oil or balsamic reduction. Bon appétit!
