Apple and cheddar soup

Directions

  1. In a saucepan, melt butter over medium heat. Cook onion for 1 to 2 minutes.
  2. Add potatoes and thyme. Continue cooking for 2 to 3 minutes. Season with salt and pepper.
  3. Add apples, apple syrup and chicken stock. Bring to a boil, then simmer for 12-15 minutes on low heat, until potatoes are tender.
  4. Stir in cream and cheddar cheese.
  5. Transfer mixture to electric blender container. Blend for 1 to 2 minutes until smooth and creamy.
  6. Just before serving, garnish with bacon and chives.
