Directions
- In a saucepan, melt butter over medium heat. Cook onion for 1 to 2 minutes.
- Add potatoes and thyme. Continue cooking for 2 to 3 minutes. Season with salt and pepper.
- Add apples, apple syrup and chicken stock. Bring to a boil, then simmer for 12-15 minutes on low heat, until potatoes are tender.
- Stir in cream and cheddar cheese.
- Transfer mixture to electric blender container. Blend for 1 to 2 minutes until smooth and creamy.
- Just before serving, garnish with bacon and chives.
