Beef tartare

with onion confit

INGRÉDIENTS

  • 3 tbsp (45 ml) M'Lord capers, rinsed and drained
  • 1 tbsp (15 ml) olive oil
  • 2 tbsp (30 ml) shallots, finely chopped
  • 4 tsp (20 ml) flat-leaf parsley, very finely chopped
  • 2 tbsp (30 ml) Dijon mustard
  • 1 tbsp (15 ml) ketchup
  • 1 tbsp (15 ml) mayonnaise
  • 1 egg yolk
  • 3 tbsp (45 ml) olive oil
  • 1 tsp (5 ml) Worcestershire sauce
  • 1 tsp (5 ml) sriracha
  • Ground salt and pepper
  • 1 lb (454 g) beef tenderloin
  • 4 tbsp (60 ml) onion confit, homemade or store-bought

ÉTAPES DE PRÉPARATION

  1. Sauté capers in oil for a few minutes while stirring constantly to avoid burning. Set aside.
  2. In a bowl, mix all ingredients thoroughly, except the meat.
  3. Using a sharp knife, chop meat finely and add it to the bowl. Add capers and stir.
  4. Place a cookie cutter on a plate. Place a tablespoon of onion confit in the bottom and fill with tartare.
  5. Serve with lamb's lettuce and croutons.
